Daily Meal Post 2/22

  1. Superbowl Snacks: Sweet Potato Chips
    Prep time: 10 mins Cook time: 20 mins Total time: 30 mins
    Serves: 4+

    Ingredients
    4 sweet potatoes (try to grab skinny ones)
    2-3 tablespoons coconut oil
    salt, to taste (Note: I use cinnamon instead)
    Instructions
    Preheat your oven to 400 degrees.
    Use a mandoline or a knife to cut your sweet potatoes thin. I’d say the thickness of a silver dollar or maybe a little thicker.
    Put some parchment paper down on a cooking sheet.
    Place sweet potato rounds on the parchment paper.
    Melt coconut oil and use a pastry/cooking brush to paint some coconut oil on top of each sweet potato round.
    Sprinkle salt on top.
    Place in the oven to bake for around 8-10 minutes.
    Flip sweet potatoes over and bake for another 5 minutes or until edges are brown and have curled up a bit.

    WOD ON OWN: alternate 200m run/walk for 1/2 mile, 30 situps, 30 pushups, 30 lunges……………….recovery, egg/banana pancakes (finished up bananas so no more) blueberries, herbal tea, chicken, spaghetti squash, broccoli, protein style burger with only lettuce, tomato, onion, herbal tea, salad (lettuce, peppers, almonds) with tuna, herbal tea with a splash of creamer (missed it!)

  2. My Favorite Paleo Recipe:
    Smashed Cauliflower "Potatoes"

    Ingredients:
    1 Medium Head Cauliflower
    3-4 Cloves Garlic
    Olive Oil (or Grass fed butter on occasion :) )
    salt and pepper to taste

    Preheat Oven to 450 degrees
    Peel your garlic cloves, cover in olive oil and wrap in foil. Roast for 15-20 minutes
    Meanwhile, trim cauliflower down (get rid of the giant stem and leaves) and place in pot of water (salted tastes better but totally optional)
    Heat water to Boil then turn down to simmer and cook until Cauliflower is well done (about 10 minutes)
    Place well done cauliflower and roasted garlic in blender or food processor with olive oil as needed
    Blend until you get the consistency of mashed potatoes....you'll hardly be able to tell it's cauliflower!

  4. banana pancake with almond butter and raw honey, oranges, mixed nuts, bell peppers, rest of paleo pizza from yesterday, smoothie (pineapple, green chard, blackberries, oj, banana), romaine lettuce, chicken sausage, broccoli, tomato, avocado, paleo fudge

    favorite recipe right now is roasted broccoli!
    Preheat oven 425, but broccoli on foil with olive oil, garlic, basil, sea salt, pepper, lemon juice (can add cayenne pepper or red pepper flakes to spice it up!) Bake for 20 min.... so bomb! good in salad and I would imagine they are good dipped in salsa or guac...like a broccoli chip

  5. turkey sausage, banana, cucumbers, grilled chicken, peppers, onions, green beans, blueberries, plantain chips and salsa, wendys grilled chicken salad with apples and pecans- had blue cheese and used half of dressing not paleo

    Turkey Sausage- I had this for breakfast a few times this week- really good!
    1 lb ground turkey
    1 teaspoon salt
    2 teaspoons sage
    1 teaspoon thyme
    1 teaspoon black pepper
    1/2 teaspoon white pepper
    1/2 teaspoon cayenne
    1/4 teaspoon garlic powder
    1/8 teaspoon ground cloves
    1/8 teaspoon nutmeg
    1/8 teaspoon allspice

    Directions:

    1
    Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.

    If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.

    Form into patties and cook as needed, freezing leftovers.

    Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

    My favorite paleo recipe: Ground turkey & green beans
    1lb ground turkey
    16oz green beans(fresh, frozen, or canned)
    24oz diced tomatoes
    garlic
    onion
    olive oil
    salt & pepper
    1 brown ground turkey in sauce pan with olive oil, minced garlic, onion
    2 drain green beans if using canned, add green beans
    3 add diced tomato, salt and pepper to taste
    4 cook until warm and serve

    My favorite paleo recipe involves blending two eggs and one banana then you take that batter and put it on a hot skillet and make a pancake out if it. Then add copious amounts of almond butter and enjoy

  11. Crockpot chicken curry

    -2 packages of chicken (1 breast 1 thigh)
    -1 can of coconut milk
    -1 onion diced
    -2-3 tablespoons of curry paste
    - tbsp garlic powder
    -salt pepper to taste

    Cook on low 8-10 hours
    I like it with roasted broccoli and I usually add some more curry powder after its done cooking cuz I love curry. Garnish with some avocado, splash some saracha sauce on there and I'm in heaven!

      4 skinless and boneless chicken breast
      4 jalapenos (chopped)
      1 medium pitted and sliced green bell pepper
      1 medium pitted and sliced yellow bell pepper
      2 teaspoons fresh chopped parsley
      2 teaspoons chili powder
      1 teaspoon thyme
      1 teaspoon ground cumin
      2 teaspoon sea salt to taste
      1 teaspoon black pepper
      2 tablespoons raw honey
      Juice 2 fresh limes
      - 1 cup chicken broth
