Daily Meal Posts 3/26 - 3-31

My apologies of the missed days. As a consolation, and since only about 15 of you check the blog anymore (I have stats), if you post one full day of meals plus one recipe, you will get the final 5 points for the month.

In addition, we will be turning this blog into a recipe and article blog. So after this month the front page of CFG Paleo will no longer be daily meal posts, but instead, helpful information about the Paleo diet. Congratulations to all of you who have made it this far!

  2. 3/26 Left recovery at home…sigh! Hardboiled eggs, avocado, tangelo, herbal tea, almonds chicken, spaghetti squash, and broccoli, herbal tea, celery and almond butter, herbal tea.

    3/27 Recovery hard boiled eggs, avocado, pear, herbal tea, chicken breast, broccoli and spaghetti squash, almonds, herbal tea.

  3. Cucumber-Pomegranate Salad

    1 lemon
    1/3 c. extra virgin olive oil
    3 Tbsp Champagne vinegar
    salt pepper
    4 small bulbs or 2 large bulbs fennel
    1 cucumber
    1 granny smith apple, halved, cored, and very thinly sliced
    1/2c fresh pomegranate seeds (from 1 pomegranate)

    From lemon grate ½ teaspoon peel and squeeze 2 tbspoons juice, Combine oil, vinegar, lemon peel, and juice, ¼ tsp salt, and ½ tsp freshly ground pepper.

    Plick 2 tblsp fennel fronds and reserve fro garnish, trim and core fennel. Very thinly slice fennel. With vegetable peeler peel alternating strips from cucumber skin, then thinly slice cucumber crosswise at an angle

    On large serving dish, layer fennel, cucumber and apple. Shake dressing and drizzle over. Top with seeds and fennel fronds.

  5. Paleo eggs Benedict

    Cook bacon over medium heat, allow to cool, then crumble; set aside.
    Rinse tomato under cold water, and slice into 1/4-inch-thick pieces.
    Place the meat of 1/2 avocado in a food processor.
    Add the lemon juice, 1 clove of garlic, and 3 tablespoons of water.
    Blend until the avocado drizzle is a smooth consistency.
    Place an egg poacher in a frying pan over medium heat.
    Crack an egg into the poacher, pour 1/4 cup of water in the frying pan, and cook covered for 4–6 minutes.
    Plate dish by stacking the egg on the tomato slice.
    Liberally dress with the avocado drizzle, then sprinkle with cracked pepper and crumbled bacon.

    Paleo ice cream/sorbet
    frozen ripe bananas
    coconut milk/almond milk
    optional: any frozen fruits, i.e. strawberries, blueberries, etc.

    directions:
    put all ingredients in food processor(some blenders may work) blend until creamy consistency
    serve
    left overs can be kept in freezer but it does get more of an icy texture

    Progenex recovery
    Paleo pizza- crust=coconut flour eggs baking soda seasonings, marinara grass fed beef tomato bell peppers onions cilantro mushrooms green onions avocado
    Coconut yogurt with cashews almonds dried mango
    Progenex more muscle
    Apple and sun butter
    Coconut milk curry chicken and bell peppers onions avocado
    Plantain chips and salsa

  12. Paleo pizza
    Pre heat oven 400
    1/2 cup full fat coconut milk
    3 eggs
    1/2 cup coconut flour
    1/2 tsp baking soda
    1 tsp garlic powder
    1 tsp rosemary
    1 tsp thyme

    Mix all dry ingredients
    Mix all wet Ingredients separately
    Slowly combined
    Consistency will be more like a batter rather than A dough

    Spread on parchment paper
    Cook for 10 minutes
    Take out of the oven and drizzled with olive oil and chopped garlic

    Top with marinara sliced tomatoes onions Bell peppers mushrooms Or whatever toppings you want

    Cook 10 more minutes

  13. Paleo pesto
    1 c walnuts
    1/2 c olive oil
    Large bunch basil
    Salt and pepper to taste

    Blend ingredients...adjust walnuts and olive oil as needed for consistency and play with the seasonings to your own taste. Super good if u mash up some hard boiled.eggs in it and make a "Green Egg Salad"...be sure to serve with some ham! ;)

    Progenex with coconut milk, eggs, tangerine, korean beef, cabbage, celery with almond butter, hamburger patty, dark chocolate, lemon lara bar

    Ground Beef Concoction
    Sautee chopped onions, add ground beef and cook until almost done, add tomato sauce, 1/2 can El Pato tomato sauce (adds a little spice), a few dashes of garlic salt, and about half a head of cabbage chopped. Simmer for about 5 minutes and enjoy!

    recovery, hard boiled eggs, strawberries, BIG salad, hard boiled eggs, herbal tea; chicken breast, asparagus, broccoli, herbal tea

    PALEO PUMPKIN BARS
    Preheat oven to 350 degrees. Grease an 8×8 pan with coconut oil.
    Ingredients:
    1 c. almond butter
    2 eggs
    ¾ c. canned pumpkin
    ¼ c. honey
    1 tsp. baking soda
    1 tsp. cinnamon
    ½ tsp. nutmeg
    ¼ tsp. ground cloves
    ¼ tsp. ground ginger
    Optional: ½ bar of Ghirardelli 70% cacao chocolate chopped YES!!
    ½ c. chopped nuts YES!!
    Mix all ingredients together until it has an even consistency. Pour into pan and bake for 23-27 minutes. Cool and enjoy!

  18. Spaghetti Squash Recipe

    1 cooked and scraped spaghetti squash
    4-5 cloves garlic chopped
    1 lemon (juice and zest)
    1 T olive oil
    1 T butter
    salt, pepper, crushed red pepper, and fresh parsley to taste


    Saute garlic in oil/butter. Add lemon juice and zest and then toss in cooked spaghetti squash. Season to taste and top with a little fresh grated parmesan (optional)

    This was really good and a nice change from marinara sauce. We had it with salad and grilled chicken last week!
